Black Bean Chili

Trent (my husband) requested that I make my vegan chili for him this week. It was a perfect time due to the bounty of veggies I got from the farmer’s market along with this week being so rainy and gray.  I made it along with some really excellant cornbread. The chili consists of tomatos, tomato  paste, vegetable stock, sweet onion, red pepper, jalipeno pepper, garlic, cumin, coriander, cocoa, salt, olive oil, and of course black beans. It takes a little over 2 hours to make and I’m always worried about the outcome. I seem to change the recipe a little each time I use it so I never know just how it will turn out.  Trent gave the chili rave revues and insisted that it was the best chili he has ever eaten! That is quite the compliment.

I had such a lovely day. I decided to take the time for myself to just do whatever I wished to do. So I made sure I woke up early enough to make it to a Farmer’s Market downtown. It was wonderful. Its every saturday till noon and I never get a chance to go because my band is always practicing saturdays. So since we didn’t have practice today I wanted to make sure I got over there. I bought a bag full of organic fruits and veggies. It was such a great experience buying the produce right from the farmers who grew them. I am excited to plan this week’s meals around all the good stuff I got. I devoured a peach as soon as I got back home and it was so good. Soft, tart, sweet, juicy…perfect!


From this point on, the day only got better. I got coffee at the market and walked around downtown. The weather could not have been better. I found a yard sale with a lot of great used books. I bought some really great titles and they came to a grand total of $3! Does it get better than that?


It turned out to be such a wonderful day. Now I am going to sit down and plan out what I want to make with all the great produce I got today.

Life has been crazy!

So as you may have noticed I have been absent from her for awhile. So much has been going on lately and it all seemed to hit us at once. In the span of a week my grandma passed away, my sister’s boyfriend passed away, and my dad’s cat of 10 years died. It has been an emotional, sad period for everyone. Life had no time to get back to normal because I started a new semester of classes. I go everyday and it already feels like a full time job. Its going to be a very busy and rewarding semester. My classes are so interesting but still very challenging. I am taking an advanced photography class with a group of really creative people. I know I am going to learn alot from everyone and hopefully improve my own work. And now I am sick. I don’t have the flu but I do have a terribly sore throat and hideous cough. All I want to do is spend this week in bed and watch my “Roseanne” and “The Office” dvds…but I know I cannot. I have to be productive and forget about how crappy I feel. I am very lucky to have a great husband that has picked up the slack for me by doing more than his half of cleaning and doing laundry and getting me what I need. thanks baby 😉 So due to all of these recent events I have not done a tone of cooking. We have resorted to alot of takeout, pizzas, and veggie burgers. I do have a little stock pile of pics on my camera of things I have made recently but I don’t know when or even if I will post them. So when things get a little more controlled I will post again. I really do love being creative with food and sharing it with anyone out there who is interested. 

I have started reading “My Life in France” by Julie Child. 

I finally saw “Away We Go”. I had such high hopes for this film. It seemed so in line with the type of films I love. I was dissapointed. It had some good parts but I was just not that entertained or impressed. 😦
