Soup for the sick

I am sick. 😦 It was inevitable that I would catch the awful cold that seems to be spreading around. It’s not H1N1 but it is still unpleasant and exhausting. Everytime T or I are sick I make my tomato soup. It’s delicious, simple, and really comforting when you are feeling under the weather. I have a hard time expressing my recipes in measurements because I rarely follow anything exactly and I mix things up a lot. I developed this soup long ago from a combination of different tomato soup recipes I had found. Here is a gist of what I put in it:

Jena’s Tomato Soup

  • 1 yellow onion diced
  • 2 cloves of garlic diced
  • 1 Big can of whole peeled tomatoes
  • 1 small can of crushed fire roasted tomatoes
  • 1 small can of vegetable broth
  • salt and pepper

Saute the onion and garlic over medium heat in a little olive oil till translucent. Add rest of ingredients. Bring to boil then reduce and simmer for 30 mins. Remove from heat and let cool. Once the soup has come to room temperature carefully blend it in Blender. MAKE SURE THE SOUP IS AT ROOM TEMP BEFORE BLENDING!! (I learned this lesson. Once I was making this soup for a camping trip with friends, I was in a hurry to finish and blended it while still hot. Hot soup exploded out of the blender covering me and my kitchen. It was painful and messy!) After blended return to pot and reheat. Enjoy!

I served the soup with slices of toasted Roasted garlic bread topped with tomato and a little cheese. I think it would have been great with soy cheese or no cheese at all.

Vegan Cafe

I just discovered that my city has a vegan cafe!! And it is not that far from my home so I am beyond thrilled. I live in Indiana so vegan/vegetarian resteraunts are pretty much non existing. I ordered Pho BBQ Chicken with veggies and brown rice. It also came with coleslaw. Yum! I can’t wait to go back and try something else!

so busy

This week, much like most weeks has been very busy. The fact that I am so busy while still being unemployed is pretty terrifying. Because I know I will have quit the juggling act when I do finally get a new job. So anyway I still try to make something healthful throughout my days. I got up late and did not have time to have anything but coffee before 2:30pm. This is BAD news for me. I am not one of those people who can skip meals. My stomach was growling through all my classes. So when I got out of my last class I was so hungry. I made a big fresh salad with a spring mix of lettuce, tomato, cucumber, and strawberry balsamic vinaigrette. I also had some carrots and whole grain crackers with a great red pepper humus. It was really delicious and exactly what I needed to get back on track for the day. I love this photo because you can see my cat Menard making his way towards my ice water. He always wants to drink my water even though he has fresh clean water in his bowl at all times. 🙂

For dinner I made myself a simple stir fry over quinoa. It consisted of broccoli, mushrooms, red pepper, pineapple, garlic, ginger, and soy sauce. I eat this combination of stir fry a lot. I usually make it for lunch but I needed a quick dinner so I threw this together and it came out crunchy, kinda sweet, and very healthful. Having all your veggies pre cut makes this meal so easy.

Trent and I are huge fans of the NBC show The Office. So are some of our really good friends. We were invited to a gathering thursday evening to watch the big Jim and Pam wedding episode. We are very excited. Everyone is bringing snacks so I decided to make mini lemon glazed cupcakes. It’s a recipe handed down to me from my mother in law and it is certainly one of my favorites. Its tart and sweet. I am so glad that I have been going to the gym each night because I ate a lot of these little cakes. They are so irresistable. cakes

I have made a total mess in my kitchen making these things. There is lemon glaze everywhere but I think the end result was worth the mess. Now I must go clean it up before I get too tired. good night:)

Yesterday

Yesterday was exhausting. Trent and I were busy with work, classes, cleaning, and laundry all day. So I made a big meal for supper. It was so delicious! Trent had whole wheat pasta and I had spaghetti squash. I topped the squash with a yummy tomato sauce and a variety of sauteed mushrooms. Along side we had green beans (yes they are from a can. They remind me of my childhood and are just good). 🙂 Plus I made bruschetta on slices of french baguette. The bruschetta was simple and so good. It consists of tomatoes, onions, EVOO, salt and pepper. I also like to add basil but I had none so I left it out. It’s one of my favorite dishes to make and I could eat just that for a whole meal. The photo kinda looks like a slop of food but trust me, it was really tasty.

I ended the night with a few goodies: a honey crisp apple, crunchy peanut butter, and the latest Yoga Journal. A great ending to a busy day.
